These Baked Chicken Fajitas are packed with Mexican flavors and are one of my favorite things to make for dinner. They come together quickly and only require handful of ingredients. You’re going to be making the restaurant quality fajitas on repeat, trust me!
We love Mexican flavors around here which you can probably tell if you’ve ever tried my Slow Cooker Chicken Tacos, White Chicken Enchiladas, or this recipe for Skillet Taco Mac n Cheese. Plus, I’m always looking for new recipes to try and of course to share with y’all.
How do I make Chicken Fajitas in the oven?
You will need these ingredients to make this recipe:
- chicken
- green bell peppers
- red bell peppers
- orange or yellow bell pepper
- red onion
- 3 cloves garlic
- fajita seasoning (or see my homemade version below)
- and olive oil
Instructions:
- Thinly slice a red onion, green, yellow and red bell pepper transferring into a medium size mixing bowl then set to the side while you prepare the chicken for cooking.
- Spray a 9×13 with non-stick cooking spray and set it aside.
- Cut uncooked chicken into half inch pieces and place in the bottom of the baking dish. Then season the chicken with salt and pepper to taste.
- Drizzle olive oil over the onions and peppers sprinkle fajita seasoning over the top and toss to combine.
- Cover the chicken with the seasoned sliced onion and peppers.
- Place the dish in a 450 degree oven for 30 minutes, tossing everything (including the chicken this time) half-way through.
- Remove everything from the oven and garnish with the juice of one lime, cilantro and more salt and pepper if desired.
Homemade Fajita Seasoning Mix:
In a small bowl or small jar combine the follow ingredients:
- 1 tablespoon chili powder
- 1/2 tablespoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon cumin
My tips for this recipe:
- Need to save a little time doing the prep work for this recipe? Buy a bag of frozen stir-fry mix. To do this you’ll need pop it in the microwave for 20-30 seconds to thaw it out before adding to the casserole dish.
- If you want to add a touch of spice to your fajitas sprinkle a 1/4 teaspoon red pepper flakes (or more to taste) over the top of the onions and pepper when you add the seasoning.

Oven Baked Chicken Fajitas

Ingredients
- 1 lb. chicken sliced
- 1 green bell pepper sliced
- 1 red bell pepper sliced
- 1 orange or yellow bell pepper sliced
- 1 red onion sliced
- 3 cloves garlic finely minced
- 1 packet store bought fajita seasoning or homemade*
Instructions
