Baked Chicken Fajitas

Tender chicken strips, vibrant veggies, and zesty Mexican seasonings come together to make these Oven Baked Chicken Fajitas. This restaurant quality recipe comes together quickly and easily. You’ll be making these chicken fajitas on repeat!

Who doesn’t love an easy chicken dinner? I know I love them! Chicken is so versatile it can prepared so many ways. It can be made as a stand alone main dish like these Garlic Parmesan  Chicken Thighs. Or you can use chicken to make a delicious pasta dish like this Monterey Chicken Spaghetti. Chicken also makes great sandwiches like this Crispy Chicken Sandwich or this Chicken Salad Sandwich. Really any way you prepare chicken it’s always a crowd pleaser!

How to make Oven Baked Chicken Fajitas:

Ingredients:

  • chicken
  • green bell peppers
  • red bell peppers
  • orange or yellow bell pepper
  • red onion 
  • 3 cloves garlic 
  • fajita seasoning (or see my homemade version below)
  •  olive oil

Instructions: 

  1. Thinly slice a red onion, green, yellow and red bell pepper transferring into a medium size mixing bowl then set to the side while you prepare the chicken for cooking.red, yellow, green vertically sliced bell peppers on wood cutting board
  2. Spray a 9×13 with non-stick cooking spray and set it aside.
  3. Cut uncooked chicken into half inch pieces and place in the bottom of the baking dish.   4. Drizzle olive oil over the onions and peppers sprinkle fajita seasoning over the top and toss to combine.Sliced onions and bell peppers tossed in olive oil and fajita seasoning in a glass bowl.
  5. Cover the chicken with  the seasoned sliced onion and peppers. 
  6. Place the dish in a 450 degree oven for 30 minutes, tossing everything (including the chicken this time) half-way through. 
  7. Remove everything from the oven and garnish with the juice of one lime, cilantro and more salt and pepper if desired.

Serving Suggestions:

Add Some Lime: Squeeze a little lime juice over the chicken and vegetables when they come out of the oven for a bright touch of acidity. 

Add a Little Heat: Sprinkle a 1/4 teaspoon red pepper flakes (or more to taste) over the top of the onions and peppers when you add the fajita seasoning.

Add Some Garnish: Of course no fajita dinner is complete without some amazing garnishes. Here’s a few suggestions:

  • Shredded Cheese
  • Shedded Lettuce
  • Sliced Jalapeños 
  • Chopped Cilantro 
  • Guacamole 
  • Pico de Gallo
  • Sour Cream
  • Hot Sauce

Homemade Fajita Seasoning Mix:

In a small bowl or small jar combine the follow ingredients: 

  • 1 tablespoon chili powder 
  • 1/2 tablespoon paprika 
  • 1/2 teaspoon garlic powder 
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cumin

My tips for this recipe: 

  • Need to save a little time doing the prep work for this recipe? Buy a bag of frozen stir-fry mix. To do this you’ll need pop it in the microwave for 20-30 seconds to thaw it out before adding to the casserole dish. 
  • Warm your tortillas before serving them. To do wrap a 5-7 tortillas in foil and place them in a 350°F oven for 15 minutes. Use tongs or oven mitts when opening the foil one they come out of the oven the foil will be very hot!
  • If you have a gas stove you can char the tortillas like I did in these photos. To do this you will need a pair of long tongs. Turn a burner to medium high heat and then place the tortilla on the burner with the tongs moving it slowly until the edges and the middle are charred. Be careful to not burn yourself and never leave the tortilla unattended as they could catch fire. No one wants a kitchen fire!

Ingredients

  • 1 lb. chicken sliced
  • 1 green bell pepper sliced
  • 1 red bell pepper sliced

  2. Horizontally cut uncooked chicken into half inch pieces and place in the bottom of a 9x13 baking dish. Then season the chicken with salt and pepper.
  3. Cover the Chicken with seasoned sliced onion and peppers.

Recipe Notes

  2.  If you want to add a touch of spice to your fajitas sprinkle a 1/4 teaspoon red pepper flakes (or more to taste) over the top of the onions and pepper when you add the seasoning.
