Seasoned Black Beans are made with a few basic ingredients and are the perfect side for you next taco night any night of the week.
At my house Mexican food, like these White Chicken Enchiladas or these Oven Baked Chicken Fajitas are on the menu every week.
For a long time I wondered what to make to go with Mexican recipes. I wanted something easy and fast but it also had to be delicious. This recipe for black beans is both.
One of the things that makes this recipe easy is that it uses canned beans. I recommend draining and rinsing beans in a colander before cooking to improve flavor and reduce sodium.

Ingredients:
- canned black beans
- red onion
- garlic
- cilantro
- chicken or vegetable broth
- olive oil
Making Seasoned Black Beans:
- Begin by heating the olive oil in the bottom of a medium sauce pan.
- Then add red onion and cook until tender and slightly translucent.
- Next, add garlic to pot and cook until fragrant; about two to three minutes.
- Add the cilantro, cayenne pepper and combine with onions and garlic.
- Add the black beans to the mixture then pour in chicken broth and season with salt and pepper. Stir to combine.
- Bring the mixture to a boil. Reduce heat and cover, simmer for 10 minutes.
These beans also make a great meatless meal. Simply prepare the beans the same way then combine with two cups prepared rice. Finally add a little Mexican cheese such as Cotija or Queso Blanco and serve.

- 2 15 oz cans black beans drained and rinsed
- 1 cup chicken broth
- 1 tablespoon olive oil
- 1 cup red onion diced
- 3 cloves garlic minced or one table spoon garlic powder
- 1 tablespoon cilantro chopped
- 1/4 teaspoon cayenne powder
- salt and pepper to personal taste
