Oven Baked Chicken Fajitas

These Baked Chicken Fajitas are packed with Mexican flavors and are one of my favorite things to make for dinner. They come together quickly and only require six ingredients.

Ingredients

  • 1 lb. chicken sliced
  • 1 green bell pepper sliced
  • 1 red bell pepper sliced
  • 1 orange or yellow bell pepper sliced
  • 1 red onion sliced
  • 3 cloves garlic finely minced
  • 1 packet store bought fajita seasoning or homemade*

Instructions

  1. Thinly slice a red onion, green, yellow and red bell pepper then set to the side while you prepare the chicken for cooking.
  2. Horizontally cut uncooked chicken into half inch pieces and place in the bottom of a 9x13 baking dish. Then season the chicken with salt and pepper.
  3. Cover the Chicken with sliced onion and peppers.
  4. Then sprinkle fajita seasoning over the top and give the vegetables (but not the chickea toss to evenly distribute the seasoning.
  5. Place the dish in a 450 degree oven for 30 minutes, tossing everything (including the chicken this timhalf-way through.
  6. Remove everything from the oven and garnish with the juice of one lime, cilantro and more salt and pepper if desired.

Recipe Notes

  1. Time saving tip: buy a bag of frozen stir-fry mix. To do this you’ll need pop it in the microwave for 20-30 seconds to thaw it out before adding to the casserole dish.
  2.  If you want to add a touch of spice to your fajitas sprinkle a 1/4 teaspoon red pepper flakes (or more to taste) over the top of the onions and pepper when you add the seasoning.
