Jalapeno Lime Corn

This Jalapeno Lime Corn is the perfect combination of sweet and spicy. Bringing just a touch of heat to sweet summer corn. This side dish your new go to recipe for your next cookout taco taco night!

I love to experiment with side dishes. I think having great side dish puts the perfect touch on a home cooked meal.

I’ve made this corn a few other times and it never disappoints. It is full of flavor and packs just a tiny bit of heat.

To make this corn you need two cups of corn. I used frozen because it’s not quite time for fresh corn yet. But if you have canned whole kernel corn just drain the liquid away and you’re good to go.

Once you have the corn you’ll need to chop an about half a small onion.

I don’t like to dice fresh jalapenos because they are do spicy.

If you use a  fresh jalapeno be careful can be very dangerous if you touch your skin or face with the oil. So be careful and wash your hands throughly after deseeding and finely dicing it.

I actually did not use a fresh pepper when a recipe calls for a diced jalapeño I use jarred jalapenos. I measure about a tablespoon in exchange for the fresh jalapeño.

To prepare the corn begin by melting butter in over medium heat in a large skillet. Then add the onion and jalapeno to the skillet and cook for about three minutes or until tender and fragrant.

Then add the corn lime juice, water salt and pepper to the to the mixture and bring to a boil. Then cover and reduce heat. Simmer for 15 minutes; stirring occasionally.

I like to garnish this with just a little lime zest for a bit of extra zip. If you don’t care for a lot of lime flavor I recommend skipping this step.

Ingredients

  • 2 cups whole kernel corn
  • 1 cup onion diced
  • 2 tablespoons butter
  • 1 fresh jalapeño diced and deseeded
  • juice of half a lime
  • Fresh lime zest for garnish optional

Instructions

  1. In a large skillet melt butter
  2. Cook onions and jalapeño until tender and fragrant
  3. Add corn and water and lime juice to skillet bring and bring contents to a boil
  4. Cover and simmer for 15 minutes, stirring occasionally
  5. Garnish with fresh lime zest if desired
