How to make Slow Cooker Hawaiian BBQ Chicken:
Ingredients:
- Chicken Breast
- Bar-b-que Sauce (use your favorite brand)
- Pineapple Juice
- Brown Sugar
- Eggs
- Vegetable Oil
- Cornstarch
- Scallions
Instructions:
- Cut the chicken breast into bite sized pieces then season with salt and pepper. Set aside.
- In a mixing bowl combine the eggs and cornstarch.
- Toss the chicken pieces in cornstarch egg mixture. Set aside.
- Heat up the oil in a large skillet over medium high heat. Brown the chicken quickly in the pan. We are not looking to cook the chicken through, just get a little color on each side.
- Place the browned chicken in the bowl of the slow cooker.
- In a medium mixing bowl combine bbq sauce, pineapple juice and brown sugar.
- Pour the sauce over the chicken. Then stir everything to combine.
- Cover and cook on low for 3-4 hours. Stir halfway (after 2 hours) through, to prevent the sauce from scorching, and replace the lid.
- Serve over rice or mashed potatoes and garnish with scallions.
Substitutions and Variations:
Chicken: I used boneless, skinless chicken breast cut into bite size pieces. You could also used chicken tenderloin or boneless, skinless thighs chopped into small pieces.
Pineapple Chunks: If you want to add pineapple to the slow slow cooker you can. Drain off the liquid and add over the pineapple over chicken before pouring on the sauce. Pineapple chunks make great garnish for this recipe.
Add Some Soy Sauce: Add a tablespoon of soy sauce for a touch savor and salty flavor.
Give it Some Spice: If you want to give this chicken slow cooker recipe a little spicy kick add 1/8 teaspoon red pepper flakes. Of course you can add more pepper flakes if you like things really spicy.
Storage:
Store leftover chicken and sauce in a tightly sealed container in the refrigerator for up to three days. I do not recommend storing the chicken in the same container as any leftover rice.
