Green Beans with Roasted Red Peppers are one of our favorite side dishes! Simple to make and packed with flavor! Plus, this recipe is low carb!

Like most people I’m trying to make better choices about what I eat. More often than not we’re eating low carb meals and skipping dinner out in favor of healthier home made meals. Anyone that’s ever done a low carb or a Keto based diet knows that green beans are a staple for that way of eating.

Eating the same thing day after day can become boring pretty fast so I’m always looking for new recipes for green beans. Recipes like this one for Steakhouse Green Beans or Easy Skillet Green Beans that both great compliments to your lunch or dinner.

Where can I get roasted red peppers:

Roasted Red Peppers are easily found already prepared in any grocery store. You can find them jarred in the pickle aisle or in the deli section. At my local store they also carry roasted red peppers near the olive bar.

You can also easily roast your own peppers by following the recipe and steps in this post for Roasted Red Peppers.

 

How to make Green Beans with Roasted Red Peppers:

Begin by melting butter in a large skillet over medium high heat.

Next, add the onions and cook until they are tender and translucent, 3-4 minutes.

Add garlic and cook for one more minute.

Then add the roasted red peppers to the skillet and cook until fragrant, 3-4 minutes.

Add the green beans, salt and pepper to the mixture the stir to combine.

Pour in chicken or vegetable broth. Bring everything to a boil, reduce the heat then cover and simmer for 15 minutes stirring occasionally. Serve immediately and enjoy.

Green Beans with Roasted Red Peppers

Ingredients

  • 2 lbs green beans fresh or frozen*
  • 1 cup chicken broth**
  • 1 cup onion chopped**
  • 3 cloves garlic minced
  • 1 roasted bell pepper sliced
  • 2 tablespoons butter
  • salt and pepper to taste

Instructions

  1. Begin by melting butter in a large skillet over medium high heat.
  2. Next, add the onions and cook until they are tender and translucent, 3-4 minutes.

  4. Then add the roasted red peppers to the skillet and cook until fragrant, 3-4 minutes.

**can exchange chicken broth for vegetable broth
