Garlic Parmesan Salmon

This recipe for Garlic Parmesan Salmon takes only 20 minutes and is totally delicious. You only need a handful of ingredients to put this flavorful recipe together. This simple and easy main dish is a great option for getting dinner on the table fast!

There is just something about the flavors of garlic and parmesan when they are matched together that makes them absolutely delicious. It’s the prefect combination for adding to fish like this easy salmon recipe or like this Garlic Parmesan Crusted Cod.  Other great recipes that feature garlic and parmesan are  Garlic Parmesan Chicken Thighs, Garlic Parmesan Shrimp. How to make Garlic Parmesan Salmon:

Ingredients:

  • salmon fillets
  • butter
  • pain breadcrumbs 
  • grated parmesan cheese
  • garlic 
  • Italian seasoning
  • salt and pepper
  • parsley (optional)

Equipment 

  • baking sheet
  • parchment paper or aluminum foil 
  • mixing bowl 
  • spoon  
  • non-stick spray

Instructions: 

  1. Preheat oven 400° then line a baking sheet with parchment paper and lightly spray with non-stick cooking spray. 
  1. With a paper towel pat the salmon fillets dry and season with salt and pepper. 
  1. Place the fish skin side down on the baking sheet. 
  1. In a small mixing bowl melt the butter in the microwave. Then combine breadcrumbs, parmesan cheese, garlic, and Italian seasoning. Stir until the butter is absorbed. 
  1. Spread the mixture over the fish pressing it into the flesh with your fingers. 
  1. Bake in the oven for about 15 minutes or until they reach 145° on a meat thermometer.  
  1. Garnish with fresh chopped parsley and a little fresh cracked pepper if desired.

Substitutions and Variations:

  • Swap the Italian breadcrumbs for plain  breadcrumbs. If you do this add a 1/2 teaspoon of the Italian seasoning. 
  • Leave out the Italian seasoning all together if you prefer. I personally like the added savoriness the Italian seasoning adds but if you don’t want to add it or you have picky eaters you might want to omit this addition. 
  • Exchange the minced garlic for a tablespoon of garlic powder if you prefer. 
  • Squeeze on a little lemon juice for a little more acidity and added brightness.    
  • Of course freshly grated parmesan cheese is always best but if you are in a hurry a prepackaged grated parmesan will do nicely.

Do I need to remove the skin from the salmon fillet?

It’s really a matter of personal choice. Leaving the skin on the fish will help the it to stay moist and prevent it from overcooking. 

Which is better fresh or frozen salmon?

Honestly, I almost  always buy frozen salmon filets. We live in Arkansas and salmon is not indigenous to our state. When purchased salmon from the fish counter at the grocery store it has been previously frozen then thawed for sale.  Which is often the case in most grocery stores or fish markets.

Tips for buying frozen salmon filets: 

  • You can tell a lot by the color: Salmon should have a bright healthy color either light pink or red depending on the type of salmon. Avoid filets that have any signs of discoloration or darkening around the edges. 
  • Salmon that has ice crystals or frost either on the fish itself or in the package it’s most likely been freezer burned. Freezer burn will not only affect the flavor bur the texture as well. 
  • Buy American when possible. The United States has the most highly regulated fisheries in the world ensuring that the best practices for growing and sustainably catching fish are followed.

My tips for this recipe:

  • Don’t skip patting the fish dry. Drying the fish will help the topping adhere to the fish.
  • Salmon is a very easy fish to prepare but it can also over cook very easily. Check the temperature of the fish at 12 minutes and then again every couple minutes until it reaches the appropriate temperature.

Ingredients

  • 2 lbs. salmon
  • ¼ cup plain breadcrumbs
  • ½ cup parmesan cheese grated
  • 3 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 2 tablespoons butter melted
  • parsley for garnish

Instructions

  1. Preheat oven to 400°
  2. Line a baking sheet with a parchment or foil spray it lightly with non-stick spray and set it aside.
  3. Pat the salmon dry with a paper towel the skin side down on the baking sheet.
  4. Season with salt and pepper.
  5. In a small bowl melt butter then combine butter, breadcrumbs, parmesan cheese, garlic and Italian seasoning. Stirring until the butter is absorbed.
  6. Spread the mixture evenly over the top of fish pressing down slightly with your fingers.
  7. Place in the middle position of the oven and bake for 12-15 or until the fish reaches 145° when a meat thermometer is inserted into the thickest part of the salmon.
  8. Garnish with finely chopped parsley and fresh cracked pepper if desired.
