Ready in just 20 minutes this baked Garlic Parmesan Crusted Cod recipe makes perfectly flakey white fish with a crispy, seasoned crust. This restaurant quality recipes will be a new family favorite.
How do you make Parmesan Crusted Cod? (full recipe card bottom of page)
Ingredients:
- cod fillets
- grated parmesan cheese
- Panko bread crumbs, plain
- garlic cloves
- Italian seasoning
- parsley
- lemon zest
- olive oil
- salt and pepper
Instructions:
Step One: Preheat oven to 425°F and line a baking sheet with parchment paper.
Step Two: Pat the cod fillets dry with a paper towel and season both with salt and pepper. Place on the baking sheet.
Step Three: In a small bowl mix together grated parmesan, bread crumbs, garlic, parsley, lemon zest and olive oil.
Step Four: Cover the tops of each piece of cod with the parmesan mixture pressing down slightly so the mixture adheres.
Step Five: Place in the preheated oven and bake 10-12 minutes or until the fish is just done and translucent in the center or to a 145°F. internal temperature on a food safe thermometer.
Step Six: Squeeze lemon juice over the top and serve immediately.
My notes and tips for this recipe:
- Cod is a very lean fish, it does not have a lot of fat so it will cook quickly. I recommend checking the fish at 10 minutes to avoid overcooking it. Overcooking will cause the fillets to become dry. When cod is cooked perfectly it will flake easily with a fork.
- Use a meat thermometer to determine if the fish it done. The best way to make sure that fish, or really any meat is cooked through and has reached a safe temperature for consumption is to use a thermometer. For cod 145°F is the internal temperature that indicates it is done.
Substitutions and Variations:
- Don’t have Panko on hand? Try making your own breadcrumbs by toasting slices of bread then pulsing them in the food processor until they reach desired consistency.
- This recipe calls for plain bread crumbs but you could use Italian seasoned bread crumbs if you want. If you do this you may want to leave out the Italian seasoning so that the fish is not over powdered by the flavor.
Storage:
Refrigerator: Garlic Parmesan Cod can be stored in a tightly sealed container in the fridge for up to three days.
Reheating: To reheat place fish in a 325°F oven and heat until just warmed through.

Very good, all the ingredients in kitchen. Is a Keeper! Hubby stopped up topping that fell off fish! We like garlic added more otherwise no changes!
