How good how is it be you ask? Well, after the first bite my husband asked if I was planning to share this recipe in the blog. When said I wasn’t sure he said that I should because everyone would love it. So, after that rave review there was nothing left to do but snap a few photographs and write down the recipe.
If you’ve never made smothered pork chops in your slow cooker then let me tell you this is the BEST way to make them. Slow cooking pork chops mean they are come out really moist and the meat absorbs seasonings and flavors from the gravy as it cooks. So, when these pork chops come out of the crock pot they are really tender and flavorful.
Before placing the pork chops in the crock pot you’ll need to sear the pork chops in a skillet for about three minutes per side. There is one very important reason for this: flavor. By searing the chops first you lock in the flavor of the meat. It’s all a part of a complex process called the Millard Reaction. This is the process in which proteins and sugars in the food start to mingle giving foods the flavor and smells we love so much.
To sear the pork chops just heat two tablespoons of olive oil in a large skillet over medium high heat.While the oil is heating up season the pork chops with salt and pepper. Then add the chops to the skillet and cook until until brown on both sides. This should take about three minutes per side. Once the pork chops are browned they are ready to move to the slow cooker.

Slow Cooker Smothered Pork Chops
This recipe for Slow Cooker Smothered Pork Chops are pure Southern comfort food. The pork chops turn juicy and fork tender. Plus, they are smothered in a delicious and savory onion and garlic gravy.
- 8 lbs thick cut pork chops I used bone-in
- 2 tablespoons olive oil
- 1 10.5 oz can cream of mushroom soup
- 3 cups water
- 1 large onion chopped
- 1 tablespoon garlic power
- 1 teaspoon Italian seasoning
- 1 .5 oz pork gravy mix
- 1 1 oz onion soup mix
- Heat olive oil over in a skillet over medium heat, while skillet is getting hot season the chops with salt and pepper add pork to skillet and cook unit browned about 3 minutes on each side
- Transfer pork chops to slow cooker then in a bowl mix together remaining ingredients, stirring until combined. Pour mixture over pork chops. Cover and cook on low for 6 hours.
