 Slow Cooker Southwestern Chicken is an easy crock pot recipe that comes together in minutes and makes dinnertime a breeze. 

Slow Cooker Southwestern Chicken

If you’ve been following along with New South Charm you might have noticed that I l-o-v-e my slow cooker. It just makes my life so easy especially on the days when I’m not home. Like yesterday when I spent the day volunteering at my church and I knew I wouldn’t be home until close to dinner time. So, before I left for the day I tossed a few ingredients in the slow cooker and when I got home dinner was pretty much ready.

That’s the beauty of crock pots right? They are the busy family’s solution to great meals at home even when we don’t have time to cook.

Slower Cooker Southwestern Chicken easy recipe that uses seasonings you probably already have so you don’t need to make a trip to the store for a special sauce or seasoning. I also really like this recipe because it only takes about 10 minutes to get prepped in the morning.

Now, I say ten minutes because I’m going to let you in on a little secret instead of chopping the onions and bell peppers that are part of this recipe I bought a bags of frozen onions and bell peppers from the freezer section at the grocery store and just tossed them in the slow cooker still frozen.

That saved me a lot of time and it made me happy because I was able to spend a few extra minutes on my hair. Trust me my hair needs all the extra minutes I can give it. Anyway, back to the recipe.

Slow Cooker Southwestern Chicken

In a mixing bowl combine a can of tomatoes and chiles with a can of tomato sauce. Then add chili powder, cumin, garlic powder, salt and pepper and stir to combine and set it aside.

Next, place 2-4 frozen chicken breasts in the bottom of the crock pot. On top of the chicken add a can of whole kernel corn, then a can of black beans. Next add the chopped onions and bell peppers of the corn and beans.

Finally, pour the tomato mixture over everything and give it a little stir just be sure to leave the chicken in the bottom of the bowl.

Cover and cook on low for 8 hours or high for 4.

When the chicken is done, remove it from the slow cooker and shredded it with two forks. This should be really easy to do because the chicken will be tender from cooking all day.

Return the chicken to the slow cooker an stir into the sauce. Serve over rice and garnish with scallions and a little lime juice or zest.

That’s it, seriously that’s got to be one of the easiest slow cooker recipes I’ve ever shared with y’all. I also think it might be one of the best!

Slow Cooker Southwestern Chicken

Prep Time 10 minutes
Cook Time 8 hours
Total Time 8 hours 10 minutes

Ingredients

  • 2-3 chicken breasts
  • 2 cups corn frozen
  • 1 15 oz. can black beans, drained and rinsed
  • 1 10 oz. can tomatoes and chilies
  • 1 8 oz. can of tomato sauce
  • 1 cup onion diced
  • 1 cup green bell pepper diced
  • 1 teaspoon chili powder
  • 1 teaspoon Cumin
  • salt and pepper to taste

Instructions

  1. In a bowl combine tomato sauce, tomatoes and chilies with Chili Powder, Cumin, salt and pepper
  2. Line the chicken breasts on bottom of the slow cooker
  3. Dump on corn and black beans
  4. Then add the onions and peppers on top
  5. Next pour on the tomato mixture
  6. Cover the slow cooker and set to cook on low for eight hours or hight for six hours
  7. When cooking is done remove the chicken from slow cooker and shred with two forks then return to mixture and stir to combine.
  8. Serve over rice
  9. *I used frozen diced onion and bell pepper that I bought in the freezer section. No need to thaw first just toss them in go.

    This sounds great! Do we use one 8-oz can of tomato sauce?

      Yes Trudy just one 8 oz can. I’m going to go up and correct that in the recipe! I hope you give this a try and love it!

    I use my slow cooker all the time in the fall and winter. It makes life so much easier. And you’ve just made it even easier with the suggestion of using frozen veggies so I don’t have to spend time chopping them. Thank you!
