The sweetness of fresh strawberries and a homemade cream topping make this Strawberry Vanilla Poke Cake a great dessert for any weeknight or party.

Summertime in the South is usually filled with three things: heat,  humidity and potlucks. At these gatherings  cool creamy desserts like this are always a hit. Cool desserts like icebox cakes like this coconut version or this lemon one. Even pies that have been chilled like this Old Fashioned Chocolate Pie or this Peanut Butter Pie with Oreo crust are perfect for enjoying while spending time with loved ones.

How to make Strawberry Poke Cake with Vanilla Cream Topping:

Do I have to use a White Cake Mix?

No, you could also use strawberry cake mix for more strawberry flavor! Another great option is Vanilla Cake. These two cake mixes perfect for this easy poke cake recipe.

How to Store Leftovers:

When you are not serving this cake you will need to keep it refrigerated. If you don’t store it in the fridge the sour cream and heavy cream could spoil.

To store tightly cover the cake with plastic wrap and keep in refrigerator for up to a week.

This cake can also be frozen for up to three months.

Happy Baking Y’all!

Susanne

That looks really good! I’ve only seen them done with jello and whipped topping, this sounds so much better! It would be perfect for this weekend’s BBQs! Yum!

There’s nothing like a good potluck! Love the salty/sweet flavours you’ve got going on in this lovely poke cake, Susanne. It’s so nice to see a poke cake that isn’t made with Jello as it’s hard for me to source in England. This is such a pretty cake and it sounds so delicious too. Scheduled to pin, and to share on our new look Hearth and Soul Facebook page later today. Thank you so much for being a part of Hearth and Soul.
