Cool desserts like icebox cakes like this coconut version or this lemon one. Even pies that have been chilled like this Old Fashioned Chocolate Pie or this Peanut Butter Pie with Oreo crust are perfect for enjoying while spending time with loved ones.
How to make Strawberry Poke Cake with Vanilla Cream Topping:

Ingredients:
- White Cake Mix
- Fresh Strawberries
- Strawberry Ice Cream Topping
- Heavy Cream
- Sour Cream
- Powdered Sugar
- Vanilla Extract
Instructions:
- Following package directions bake cake in a 9×13 cake pan or dish.
- Remove cake from oven and with the handle of a wooden spoon or wooden skewer poke holes 1 inch apart all over the cake.
- After you’ve poked the holes in the coke pour a cup of strawberry ice cream topping over the top and spread it around making sure the syrup goes into the holes.
- Chill the cake in fridge for 2-4 hours.
- Just before taking the cake out of the fridge make the cream topping.
- To make the topping combine heavy cream, sour cream, confectioners’ sugar, and vanilla extract in bowl with a mixer until stiff peaks form.
- Spread the topping over the chilled cake then top with chopped strawberries and a drizzle of strawberry syrup. Cover and refrigerate for another 30 minutes before serving.
- Garnish with sliced strawberries; fresh mint adds a pop of color but can be omitted if your don’t want to add it.
Do I have to use a White Cake Mix?
No, you could also use strawberry cake mix for more strawberry flavor! Another great option is Vanilla Cake. These two cake mixes perfect for this easy poke cake recipe.
How to Store Leftovers:
When you are not serving this cake you will need to keep it refrigerated. If you don’t store it in the fridge the sour cream and heavy cream could spoil.
To store tightly cover the cake with plastic wrap and keep in refrigerator for up to a week.
This cake can also be frozen for up to three months.

- 1 11 oz. jar strawberry ice cream topping
For the Vanilla Cream Topping:
- 2 cups heavy cream
- ½ cup sour cream
- ½ cup powered sugar
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries sliced
