Brownie Cookies

Brownie Cookies are all the fudgy goodness of chocolate brownies in a cookie form. Crisp edges and soft gooey middles will make these your new favorite cookie!

Who doesn’t love a homemade cookie? I can’t think a single time that someone offered me freshen baked cookie that I’ve said no. The reverse is true as well I’ve never offered someone a homemade cookie and had them refuse. There’s just something amazing about cookies, especially ones you’ve made yourself, it’s almost like sharing a hug. 

Classic cookies like my Old Fashioned Chocolate Chip Cookies are always a crowd favorite. My Easy Nuttella Cookies or Chocolate Peanut Butter Chip Cookies are a little more unusual but always favorites with my family. If your looking for an almost homemade recipe check out my Brownie Mix Cookies. These cookies are still amazing but a little easier to make.

How to make Brownie Cookies: 

What you’ll need: 

  • Baking chocolate
  • Unsalted Butter 
  • Light brown sugar 
  • Vanilla extract
  • All purpose flour 
  • Chocolate chunks
  • Flaky sea salt

Equipment: 

  • Mixing bowls
  • Cookie Sheets 
  • Parchment paper
  • Large Spoon or cookie scoop 

Instructions: 

  1. Start by preheating your oven to 350 degrees. 
  1. Next line a cookie sheet with parchment paper or a silicone baking mat. Set the cookie sheet aside until dough is ready. 
  1. With a sharp knife roughly chop dark baking chocolate into bite size pieces. Slice unsalted butter into squares. Melt the chopped chocolate and butter in the microwave in 30 second increments stirring between each until the mixture reaches an almost melted consistency. 
  1. Set bowl aside and allow the mixture to cool. Do not skip this step. You will add this mixture with a the remaining ingredients which includes eggs. You don’t want the butter and chocolate mixture to cook the eggs. This will prevent the cookies from taking shape and affect their texture.
  1. In a large mixing bowl beat together the egg, light brown sugar, and vanilla extract
  1. Pour cooled chocolate and butter mixture into the egg mixture and mix until combined.
  1. Add the flour to the wet mixture and stir until incorporated.  
  1. Add the chocolate chunks to bowl and gently mix into the batter.
  1. Use a spoon or cookie scoop to drop the cookie dough onto the prepared cookie sheet leaving space between each cookie as they will spread while baking
  1. Lightly sprinkle with flaky sea salt over the top of the top of the scoops.
  2. Bake for 12-15 minutes the cookies will be soft but will continue to set as they cool. Allow the cookies to rest on the baking sheet for 15 minutes before transferring to a white cooling rack.

Variations: 

  • Change up the flavor of these cookies by adding  a 1/2 cup of chopped nuts such as: walnuts, pecans, almonds. 
  • Add in crushed candy like toffee or peppermints or mini M&M’s for a fun seasonal twist. 
  • Swap the dark chocolate chunks for milk chocolate or semi-sweet chocolate chunks.

Storing and Freezing: 

Storing: 

Store cookies in zip top bag or air tight container at room temperature for up to two weeks. 

Freezing: 

These Brownie Cookies or the cookie dough freeze well. You can keep them in the freeze for up to three months. 

To freeze baked cookies: allow cookies to cool completely then place in a zip top freezer bag. To thaw place in the fridge overnight. Then bring them to room temperature on the counter before eating. 

To freeze the cookie dough: Scoop balls of dough on to a cookie sheet or small tray lined with parchment paper. Place cookie sheet or tray in the freezer for several hours until dough is completely frozen. Thaw overnight in the refrigerator or bake from frozen by adding 1 or 2 minutes to the baking time.

My Tips For This Recipe: 

  • Allow the oven to preheat for 10-15 minutes before placing the cookies in to bake. This will help ensure even baking.
  • Don’t over bake the cookies, remove them from the oven when still soft. Over baking will prevent the cookies from forming a fudgey brownie like center 
  • If you double or triple this recipe only bake one sheet of cookies at a time to allow for even heat distribution in the oven.
