Brownie Cookies

Brownie Cookies are all the fudge-y goodness of chocolate brownies in a cookie form. Crisp edges and soft gooey middles will make these your new favorite cookie!

Ingredients

  • 3.5 oz dark baking chocolate chopped
  • 2 tablespoons unsalted butter
  • 1 egg
  • 1/3 cup light brown sugar
  • 1 teaspoon vanilla extract
  • 3 tablespoons all purpose flour
  • 1/4 cup chocolate chunks
  • Flaky sea salt

Instructions

  1. Preheat oven to 350 degrees
  2. Line a baking sheet with parchment paper and set it aside
  3. With a sharp knife roughly chop dark baking chocolate into bite size pieces. Slice unsalted butter into squares. Place both into a microwave safe mixing bowl.
  4. Melt the chopped chocolate and butter in the microwave in 30 second increments stirring between each until the mixture reaches an almost melted consistency Set bowl aside and allow it to cool*
  5. In a large mixing bowl beat together the egg, light brown sugar, and vanilla extract
  6. Pour cooled chocolate mixture into the egg mixture and mix until combined
  7. Add the flour to the wet mixture and stir until incorporated.
  8. Add the chocolate chunks to bowl and gently mix into the batter.
  9. Use a spoon or cookie scoop to drop the cookie dough onto the prepared cookie sheet leaving space between each cookie as they will spread while baking
  10. Lightly sprinkle with flaky sea salt over the tops of the scoops.
  11. Bake for 12-15 minutes the cookies will be soft** but will continue to set as they cool. Allow the cookies to rest on the baking sheet for 15 minutes before transferring to a white cooling rack.

Recipe Notes

  • *Do not skip this step you will add this mixture with a the remaining ingredients which includes eggs. You don’t want the butter and chocolate mixture to cook the eggs. This will prevent the cookies from taking shape and affect their texture.
  • **Don’t over bake the cookies, remove them from the oven when still soft. Over baking will prevent the cookies from forming a fudgey brownie like center
  • ***If you double or triple this recipe only bake one sheet of cookies at a time to allow for even heat distribution in the oven
