How To Make Maple and Brown Sugar Sweet Potatoes:

- Sweet Potatoes
- Maple Syrup
- Ground Cinnamon
- Brown Sugar
- Olive Oil
- Candied Pecans (garnish)
Instructions:
- Preheat oven to 425°F then line a large baking sheet with foil and set it aside.
- Wash then peel the sweet potatoes then roughly chop them into one inch pieces.
- Place cubed sweet potatoes in a large bowl and drizzle with olive oil and maple syrup then toss to coat in the syrup mixture.
- Next sprinkle on the cinnamon and brown sugar. Toss to coat unit all pieces are evenly covered.
- Spread the sweet potatoes out in a single layer on a large baking sheet, Bake in oven for 25-30 minutes stirring halfway through baking time.
- When the potatoes are done cooking the edges will be crispy and golden brown and easily pierced with a fork or toothpick.
Substations and Variations:
No Time To Peel, No Problem: This recipe calls for peeled sweet potatoes however if you prefer you can leave the skin on the sweet potatoes.
Pancake Syrup: In a pinch you can use pancake syrup. The flavor maybe be slightly different and the potatoes might roast to as golden brown. The sweet potatoes still taste amazing though~
Cinnamon Spice: I like the added flavor of the cinnamon but it is not a necessary ingredient. Feel free to leave it out or use less cinnamon to meet your tastes.
Add A Little Garnish: I garnished these Maple Roasted Sweet Potatoes with candied pecans. You can make your own pecans or buy a bag or premade candy pecans at the grocery store.
Tips and Notes:
Chop the sweet potatoes into roughly the same size pieces. Cutting them into a similar size will help the potatoes to cook evenly.
Don’t over crowd the sheet pan. You don’t want to put too many potatoes on the pan because it will prevent them from becoming crisp on the outside. Line them on the sheet pan in a single layer not touching each other. If your sheep pan isn’t big enough try cooking in the sweet potatoes in batches.
To check for doneness you can insert a toothpick or fork in a piece in the middle of the pan. If it slides in smoothly, with no resistance, the sweet potatoes are ready to come out of the oven.
Storage:
Refrigerator: Store leftovers in an airtight container in the refrigerator for up to three days.
Reheating; These roasted sweet potatoes can be reheated in a 300° F oven for about 10 minutes stirring halfway through. Check on the sweet potatoes frequently to prevent burning.
You can also reheat leftover in the microwave in 45 second intervals until warm through stirring between each interval until heated through.
