One Pot Creamy Chicken Orzo is an easy 30 minute recipe that’s made with chicken, tomatoes, mushrooms, and quick cooking orzo pasta.
If you’ve never cooked orzo pasta before let met tell you that you’re going to love it. Orzo it perfect for getting dinner together when you’re in hurry. It’s tiny pasta that resembles rice and cooks in about 10 minutes. It is also extremely versatile and can be used in a variety of recipes.
You will need a big pot to make this recipe. I used my dutch oven but any large pot with a lid will do nicely. Just make sure it’s large enough to hold the liquid and pasta when combined.
Begin by cutting two or three chicken breasts into bite size pieces and then seasoning them with salt. While you are cutting up the chicken warm up olive oil in the bottom of the pot. Place the chicken in the warm pot and cook for about five minutes or until cooked through. Add in chopped onion and garlic cook for two minutes.
When the chicken is cooked add Italian Seasoning, Oregano, Basil and fresh ground black pepper to the chicken and toss everything together. Then add a can of cream of chicken soup, chicken broth, and can of Italian flavor diced tomatoes (drained), and sliced mushrooms. Str everything together and let the mixture cook for a minute or two. Stir in two cups of orzo pasta and bring the pot of a boil. Reduce the heat to medium low, cover and let cook for 10 minutes. At the end of the 10 minutes add in grated parmesan cheese and stir in allowing the cheese to melt. Garnish with additional cheese or parsley if desired.
So that’s all there is to it. Just thirty minutes and dinner is ready. I think the best part is that this pasta dish only need the one pot, That means less time doing dishes and more time with my family.
I’m so glad you stopped by today!
Happy Cooking Y’all!
