Ditch that bottle of store bought stuff and try this simple recipe for Easy Homemade Caesar Dressing. It’s a zillion times better than anything you can buy.
When I make a pasta dish I like to serve a big leafy green salad with it. One of my favorites is Caesar Salad. I just love the crisp flavor if Romaine lettuce, parmesan cheese, and croutons combined with the savory flavor of Caesar dressing.
Here’s an interesting fact about Caesar Salad Dressing; it’s not Italian at all. In fact it’s said to have been invented by a restauranteur in California in the 1940’s. So it seems that one of the most popular salads that accompanies Italian favorites is purely American.
This recipe calls for anchovy paste. Now, I know you’re probably thinking that sounds gross. I know that’s what I thought BUT anchovies are an ingredient in traditional Caesar salad. I like the savoriness it brings to the salad but this ingredient is optional. Either way it’s a great salad dressing.
In a bowl whisk together mayonnaise and sour cream until it’s well combined. Then add minced garlic, lemon juice, Worcestershire sauce, anchovy paste and black pepper. Whisking until dressing is thick and creamy.
Serve over fresh Romaine lettuce and garnish with Parmesan cheese and croutons. Prepared sliced chicken and make this salad a meal.

I like using anchovy paste, coz I’m not really all that ok with anchovies and if you open a package then you have to figure out what to do with the rest. This looks so cool and refreshing and perfect for summer!
