I love the holidays! I especially love Christmas-time and spending time with family and friends. Celebrating with good food and cocktails. If there is ever a time to serve champagne, besides New Year’s Eve, it’s Christmas while the lights on the trees are sparkling and everyone is feeling festive. These Cranberry Mimosas or Poinsettia Cocktails as they are sometimes called are just what you need for a great party or Christmas Brunch!

(Scroll Down For Complete Recipe)
Ingredients:

- Fresh Rosemary Sprig (optional garnish, see notes)
Special Equipment:
- 8- ounce Champagne Flute
- Jigger or small shot glass (for measuring)
Instructions:
- Pour the cranberry juice in the glass then top off with champagne.
- Garnish with fresh cranberries and/or Rosemary if desired.
Substitutions and Variations:
Something Bubbly: Champagne is the most common choice for a mimosa but you can also a sparkling wine such as:
- Prosecco
- Asti Spumante
- or Cremate.
Mocktails for Everyone: For a non-alcoholic version try using sparking apple cider, sparkling white grape juice. There are also lots of zero alcohol champagne and sparkling wines available that would be a great choice for these mimosas.
Change the Flavor: Use Cran-Apple Juice to change the flavor profile slightly with a touch of apple flavor. For this swap you will still use 2 oz. of juice. This version is especially delicious with garnished with a cinnamon stick!
Cranberry Juice vs. Cranberry Cocktail Juice: You can use either 100% Cranberry Juice or Cranberry Cocktail Juice in this drink. Cranberry Juice is tart with no added sugar or sweeteners. Cranberry Cocktail Juice is sweetened with additional sugar or most commonly high-fructose corn syrup which makes it less tart. For the best flavor with these Cranberry Mimosas I recommend using 100% Cranberry Juice. The sweetness of a cocktail juice blend will take away from the crisp sweetness of the champagne.
Notes and Tips:
Because of the carbonation of these champagne these are best served immediately and not made ahead of time. Making them ahead of time can lead flat champagne. The bubbles are the best part of the champagne if you ask me!
Chill the champagne and the cranberry juice in advance so the cocktails will be cold when you pour them..
Rosemary is a beautiful garnish and looks very Christmasy however remember it also will change the flavor of your cocktail. Rosemary has a slight papery flavor which I think is wonderful with this mimosa but it might not be for everyone.
One of my favorite ways to host a get together with friends is to make a few great appetizers like Shrimp Cocktail, Smoked Salmon Dip and maybe a cheeseboard with some great olives. Then make up some great cocktails like these mimosas or Old Fashioned Cocktails on a cold night to warm up everyone. Then turn on some great music or a classic Christmas movie and let the laughs begin.
Cheers Y’all!
