Double Chocolate Chip Muffins

Ingredients

  • 2 ½ cups all-purpose flour
  • ½ cup cocoa powder
  • 1 cup plain yogurt
  • 1 cup chocolate chips divided
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup vegetable oil canola, sunflower
  • 2 eggs
  • 1 cup sugar
  • 2 tsp vanilla extract

Instructions

  1. Pre-heat the oven to 350°F. Then prepare a 12 muffin pan with 12 muffin liners. Set it aside.
  2. Mix dry ingredients (flour, sugar, cocoa powder, baking powder, baking soda, salt) and ¾ cup chocolate chips in a bowl.
  3. Then, beat the eggs in a large bowl. Add yogurt, vanilla extract, and oil. Whisk to combine.
  4. Next, incorporate dry ingredients with wet ingredients until well combined.
  5. Finally, divide the muffin batter into the twelve muffin liners. Bake for 20 to 22 minutes, or until an inserted toothpick comes out clean.
  6. Let the muffins cool for 10 minutes in the pan, then place them onto a cooling rack, so they don’t get moist in the bottom.

Recipe Notes

  1. Canola or Sunflower Oil can be used in place of Vegetable Oil this is a 1:1 swap.
  2. To Freeze: Cool muffins completely then wrap individually in plastic wrap. Place muffins in a freeze safe zip top bag. Freeze for up to three months. To thaw and reheat remove muffin from plastic wrap and wrap in foil place in a 350°F oven for 10-15 or until heated through. You can also microwave for 1-2 minutes or until thawed and warmed completely.
