Chocolate Chip Peanut Butter Blondies

Ingredients

  • ½ cup unsalted butter melted and cooled
  • 1 + 1/4 cup brown sugar
  • ¾ cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 2 large eggs + 1 egg yolk room temp
  • 1 + ¼ cup all purpose flour sifted
  • ¼ teaspoon salt
  • 1 teaspoon baking powder
  • ½ cup semi sweet or dark chocolate chips + more on to for decoration
  • Sea salt flakes on top optional

Instructions

  1. Preheat the oven to 350 F.
  2. In a large bowl, beat the butter and sugars on low. Add peanut butter. You can also use a food processor for this recipe.
  3. One by one add eggs and yolk. Beat on low until all combined.
  4. In a separate mixing bowl combine dry ingredients and then add to wet ingredients. Mix on low until everything combines. Fold in the chocolate chips.
  5. Pour into a 8 or 9 inch brownie pan (greased or lined with parchment paper). Decorate with chocolate chips and sea salt flakes if using.
  6. Bake for 30 minutes. The center should still be a little wobbly and not set when you remove the pan from the oven.
  7. Sprinkle a pinch of flaky sea salt over the top if desired.
  8. Cool on a baking rack for 15 minutes before slicing.
