Green Beans with Roasted Red Peppers

Green Beans with Roasted Red Peppers are one of our favorite side dishes! Simple to make and packed with flavor! Plus, this recipe is low carb!

Ingredients

  • 2 lbs green beans fresh or frozen*
  • 1 cup chicken broth**
  • 1 cup onion chopped**
  • 3 cloves garlic minced
  • 1 roasted bell pepper sliced
  • 2 tablespoons butter
  • salt and pepper to taste

Instructions

  1. Begin by melting butter in a large skillet over medium high heat.
  2. Next, add the onions and cook until they are tender and translucent, 3-4 minutes.
  3. Add garlic and cook for one more minute.
  4. Then add the roasted red peppers to the skillet and cook until fragrant, 3-4 minutes.
  5. Add the green beans, salt and pepper to the mixture the stir to combine.
  6. Pour in chicken or vegetable broth. Bring everything to a boil, reduce the heat then cover and simmer for 15 minutes stirring occasionally. Serve immediately and enjoy.

Recipe Notes

*if using fresh green beans wash and trim the ends first
**can exchange chicken broth for vegetable broth
*** or two shallots
