Ingredients
1acorn squashsliced
2tablespoonsolive oil
1/4cupparmesan cheesegrated
1teaspoongarlic powder
salt and pepper to taste
Instructions
Preheat oven to 400º
Cut the squash in half, remove the seeds with a spoon, then slice the squash into 1/2 moon shaped pieces (see post for tips on cutting an acorn squash)
In a large bowl combine olive oil and garlic powder
Toss the squash in oil then lay squash out on a baking sheet sprinkle each slice with parmesan cheese then season with salt and pepper
Bake for 30 minutes until the squash is tender and the cheese is golden brown
