Oven Roasted Parmesan Acorn Squash is an easy five ingredient side dish that is seasoned with garlic and roasted to a golden brown with savory parmesan cheese.

Ingredients

  • 1 acorn squash sliced
  • 2 tablespoons olive oil
  • 1/4 cup parmesan cheese grated
  • 1 teaspoon garlic powder
  • salt and pepper to taste

Instructions

  1. Preheat oven to 400º
  2. Cut the squash in half, remove the seeds with a spoon, then slice the squash into 1/2 moon shaped pieces (see post for tips on cutting an acorn squash)
  3. In a large bowl combine olive oil and garlic powder
  4. Toss the squash in oil then lay squash out on a baking sheet sprinkle each slice with parmesan cheese then season with salt and pepper

  5. Bake for 30 minutes until the squash is tender and the cheese is golden brown
