Easy White Chicken Chili

Ingredients

  • 2 tablespoons olive oil
  • 2 cups onion chopped
  • 1 4 oz. can chopped green chilies
  • 3 cloves garlic mined ( or 1 tablespoon garlic powder)
  • 2 cups cooked chicken shredded
  • 2 15 oz. cans Great Northern Beans
  • 1 cup corn
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 2 teaspoons oregano
  • 1/2 teaspoon black pepper
  • 4 cups chicken broth

Instructions

  1. Prepare and shred the chicken. In a small bowl combine the garlic powder, oregano, cumin, chili powder, and black pepper. Set both aside.
  2. Heat olive oil in the bottom of a large pot over medium heat. Add the chopped onions, and green chilis. Sauté until onions are tender and the chilies are fragrant, about three minutes. Add garlic and continue cooking for one minute stirring constantly.
  3. Add the chicken, beans, and corn to the pot and stir together.
  4. Sprinkle the seasoning mixture over the top of the chicken, beans and corn stir until well combined.
  5. Pour in the chicken broth and stir once more.
  6. Increase the heat to medium high and bring to a boil. Then reduce heat to low and simmer for 15 minutes. Garnish as desired and serve.

Recipe Notes

  1. Place chicken breasts in the bottom of a 4 quart stockpot or dutch oven. Season chicken with salt and pepper. Pour in 4 cups of chicken stock. Cook over medium heat for about 20 minutes or until chicken is tender and cooked through.
