  • 2-3 boneless skinless chicken breast
  • 2 cups of orzo pasta
  • 1 small onion diced
  • 1 can cream of chicken soup
  • 1 can sliced mushrooms
  • 1 can Italian Flavor diced tomatoes drained
  • 2 cups chicken broth
  • 1 teaspoon Italian Seasoning
  • 3 cloves garlic or one tablespoon garlic powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon basil
  • salt and pepper to taste


  1. Cut two or three chicken breasts into bite size pieces and then seasoning them with salt.
  2. While you are cutting up the chicken warm up olive oil in the bottom of the pot.
  3. Place the chicken in the warm pot and cook for about five minutes or until cooked through.
  4. Add in chopped onion and if using garlic cloves add and cook for two minutes.

  5. When the chicken it cooked add Italian Seasoning, Oregano, Basil, garlic powder (if not using fresh cloves) and fresh ground black pepper to the chicken and toss everything together.

  6. Then add a can of cream of chicken soup, chicken broth, and can of Italian flavor diced tomatoes (drained), and sliced mushrooms. Stir everything together and let the mixture cook for a minute or two.
  7. Stir in two cups of orzo pasta and bring the pot of a boil.
  8. Reduce the heat to low, cover and let cook for 10 minutes.
  9. At the end of the 10 minutes add in grated parmesan cheese and stir in allowing the cheese to melt. Garnish with additional cheese or parsley if desired.
