Slow Cooker Teriyaki Chicken and Rice

Ingredients

  • 2 lbs boneless chicken breasts
  • ½ cup sugar
  • ½ cup soy sauce
  • 1 tablespoon honey
  • 3 tablespoons apple cider vinegar
  • ½ teaspoon ground ginger
  • 1 teaspoon garlic powder
  • 2 teaspoons cornstarch
  • salt and pepper to taste
  • sesame seeds and green onion for garnish

Instructions

  1. Place the chicken breast in the bottom of the slow cooker
  2. In a bowl wihisk together sugar, soy sauce, honey, apple cider vinegar, ground ginger, garlic powder, cornstarch, salt and pepper
  3. Pour mixture over chicken (chicken will not be completely covered in sauce)
  4. Cook on low six hours or high for four
  5. At the end of the cooking time remove chicken from slow cooker and cut into bite size pieces
  6. and set aside.
  7. Next two add 2 teaspoons of corn starch to the remaining liquid in the slow cooker and stir until combined.
  8. Return chicken to cooker, replace lid and allow sauce to thicken for ten minutes. While the sauce is thickening prepare rice
