Farmer's Market Breakfast Casserole

  • 10 eggs
  • 1/2 lb. sausage
  • 1 cup sweet onion
  • 1 cup bell pepper
  • 2 plum tomatoes seeded and diced
  • 2 cloves garlic minced
  • 1 tablespoon chives minced
  • 1 1/2 cups milk
  • 1 - 2 cups sharp cheddar shredded
  • salt and pepper to tastes


  1. In a large skillet cook the sausage, onions, bell peppers and garlic until the sausage is no longer pink and the onions and garlic are fragrant. Drain away the fat and set aside.
  2. In the bottom of a casserole dish treated with non-stick spray spread out the sausage mixture.
  3. In a bowl stir together eggs, milk, garlic, cheese, tomatoes, chives, salt and pepper. Then pour the egg mixture over the sausage in the casserole dish. Then place in the oven and cook for 45 minutes or until the middle is set and edges are golden brown.
  4. This casserole can be prepped the night before and kept int he fridge overnight for a great breakfast to serve guest or even Christmas Morning. To do this follow the directions to just before placing it in the oven. Instead cover tightly with plastic wrap and then refrigerate overnight.
