Spicy Sausage and Penne Pasta

Ingredients

  • 1 pound Kielbasa sliced
  • 16 oz. penne pasta
  • 10 oz Ro-Tel
  • 1 cup onion diced
  • 1 cup bell pepper diced
  • 3 cloves garlic minced
  • 2 cups chicken broth
  • ½ cup cream or milk
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon paprika
  • ¼ teaspoon red pepper flakes optional
  • 1 cup Monterey Jack Cheese
  • Salt and pepper to taste
  • Scaillons for garnish optional

Instructions

  1. Add olive oil to an oven-safe skillet over medium high heat. When oil is warm add sausage, onions, bell pepper and garlic. Cook for 3-5 minutes or until sausage is browned.

  2. Next, add the chicken broth, tomatoes, cream, pasta, Worcestershire sauce, parprika, half of the cheese, salt and pepper and stir to combine.

  3. Bring to boil, cover skillet, and allow to simmer for 15 minutes.

  4. Add in remainder of the cheese cover to melt.

  5. Garnish with scallions if desired.
