Corn Casserole

Corn Casserole is a classic side dish that is made with creamed corn, sweet corn, herbs and seasonings and topped with a crust of crisp butter crackers. This recipe is always a crowd pleaser and prefect for holiday meals or potlucks.

Ingredients

For the Corn Mixture

  • 2 cans cream style corn
  • 1 can whole kernel corn drained
  • 2 eggs whisked
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

For the Cracker Crust

  • 1 sleeve Ritz crackers crushed
  • 1/4 cup butter melted

Instructions

  1. Preheat oven to 350°F and spray a 9x13 baking dish with non-stick spray. Set the baking dish aside.
  2. In a small bowl whisk together the two eggs. Open and drain the can of whole kernel corn.

  3. In a medium sized mixing bowl whisk together the cans of corn, eggs, butter, Italian seasoning, garlic powder and onion powder, salt and pepper.
  4. Transfer the corn mixture into the prepared baking dish.
  5. Crush the Ritz cracker into a separate mixing bowl and toss in the melted butter until evenly coated.
  6. Sprinkle butter coated crackers over the corn mixture. And place in the preheated oven for 30 minutes or until the crackers are golden brown.
