Easy No-Bake Cheesecake

This no-bake cheesecake is creamy, silky, and just the right amount of sweet and slightly tangy! Its graham cracker crust goes perfectly with the rich filling.

Ingredients

For the Crust:

  • 10-12 Whole Graham Crackers
  • ¾ cup Light Brown Sugar
  • 2 tablespoons Butter

For the Filling:

  • 1 14 ounce can Sweetened Condensed Milk
  • 2 8 oz. Packages of Cream Cheese
  • 1 cup Powdered Sugar
  • 1 tablespoon Lemon Juice
  • 2 teaspoons Vanilla
  • 1 ounce Container of Cool Whip, thawed

For the Topping:

  • Whipped Cream
  • Strawberries

Instructions

  1. For the Crust:
  2. Add the graham crackers to the food processor and process until they are crumbs.
  3. Add in the butter and brown sugar and process those until all ingredients are mixed in and there are no butter chunks.
  4. Pour the crust mixture into the pan and press down to form the bottom and side of the pan. Store in the freezer until the filling is ready.
  5. For the Filling:
  6. Whip the sweetened condensed milk in a medium to large bowl with the hand mixer (or use your stand mixer) for about 5 minutes, or until it gets lighter in color, almost to the point it makes peaks.
  7. Add the cream cheese, powdered sugar, lemon juice, and vanilla and mix well with the hand (or stand) mixer.
  8. Fold in the thawed cool whip until everything is well combined.
  9. Pour the filling on top of the prepared crust and smooth out the top.
  10. Allow to set in the fridge for, at a minimum, 12 hours.
  11. For the topping:
  12. Once set, and firm enough to cut through without it falling, add your desired topping (such as whipped cream and strawberries), slice and enjoy!
