Sautéed Zucchini and Corn

This recipe for Sautéed Zucchini and Corn is a simple 15 minute side dish that is cooked with onions and garlic and seasonings and then topped with a sprinkled of Parmesan cheese. This delicious recipe is the prefect side for chicken, fish, beef or pork.

Ingredients

  • 2 tablespoons olive oil
  • 2 zucchini cut into one inch pieces
  • 4 cups corn
  • 1 cup onion chopped
  • 3 cloves garlic minced
  • 1 teaspoon Italian Seasoning
  • salt and pepper to taste

Instructions

  1. Heat the oil in a large skillet until it is hot but not sizzling
  2. Sauté the onion until tender, about three minutes
  3. Add the garlic and cook stirring constantly until fragrant, about one minute
  4. Add the zucchini, corn, Italian seasoning, salt and pepper to the skillet stir to combine
  5. Cook for 5-7 minutes stirring occasionally, until zucchini is tender
  6. Garnish with parmesan cheese and fresh cracked pepper to taste
