This Chicken Salad recipe is loaded with pecans and grapes then tossed in a creamy dressing. . With just a handful of ingredients and a few minutes work you’ll have a great cold salad perfect for lunch or a light dinner!

Ingredients

Salad

  • 2 large chicken breast cooked shredded
  • 1-2 stalks celery sliced
  • cup red grapes sliced in half
  • ½ cup pecans chopped
  • ½ cup red onion finely diced
  • 2 tablespoons parsley finely chopped (optional)

Dressing

  • cup mayonnaise
  • 2 tablespoons sour cream
  • 1 teaspoon dijon mustard
  • Salt and pepper to taste

Instructions

  1. Prepare the chicken and shred or chop into bite size pieces, set it aside.
  2. In a large mixing bowl combine the mayonnaise, dijon mustard, sour cream, salt and pepper.
  3. Add the remaining ingredients toss together until everything is coated in the dressing.

  4. Cover bowl with a lid or plastic wrap and place in the refrigerator to chill for 30 minutes.
