Whisk together your milk, granulated sugar, and active dry yeast in a large bowl or stand mixer. Allow the mixture to sit until the yeast begins to foam (about five minutes).
-
Once the milk mixture is foamy, add in the coconut oil, vanilla extract, and eggs. Whisk the ingredients together, ensuring both eggs are beaten, until well mixed.
-
Add the salt and flour and whisk again. Until the flour and milk mixture are incorporated into each other. Continue stirring until the dough pulls away from the side of the bowl.
-
On a lightly floured surface, gently knead the dough until smooth and slightly sticky. Place the dough back in your bowl, cover it with plastic wrap, and allow the dough to rise for 20 minutes.
-
While the dough is rising, preheat oven to 400 Fahrenheit.
-
Melt butter in a small bowl then in a second bowl combine brown sugar and cinnamon. Grease a bundt pan with non-stick spray. Set aside until dough is ready.
-
Once the dough has risen, break the dough into balls about 1-1.5 inches in diameter.
-
Dip the balls of dough into the melted butter then coat in the brown sugar mixture. Layer the dough balls in the greased bundt pan.
-
Bake for 15 minutes and allow to cool slightly before removing from the pan.
