Baked Chicken Parmesan

Ingredients

  • 16 oz Rigatoni pasta
  • 2 cups of diced chicken cooked
  • 2 cups shredded Mozzarella cheese separated
  • 1 cup shredded Parmesan cheese
  • 2 cans of diced tomatoes
  • 2 tablespoons tomato paste
  • 1/2 tablespoon Italian Seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon sugar
  • salt and pepper to taste

Instructions

  1. Preheat oven to 350º
  2. Shred or diced prepared chicken
  3. Prepare pasta according to package directions
  4. In a large bowl combine diced tomatoes, tomato paste, Italian Seasoning, garlic powder and sugar, salt and pepper to taste
  5. Add chicken, cooked pasta, and one cup of Mozzarella cheese to bowl and stir until combined
  6. Prepare a 9x13 casserole dish with cooking spray and pour mixture into dish
  7. Top with remaining Mozzarella cheese and half of the Parmesan cheese
  8. Bake for 30 minutes at 350º
  9. Sprinkle remaining Parmesan cheese on top and garnish with parsley flakes (optional)
