Cranberry and Pumpkin Seed Granola

Cranberry and Pumpkin Seed Granola is a great breakfast or snack. It’s full of warm, comforting Fall flavors and it’s good for you too!

Ingredients

  • 1/4 cup brown sugar packed
  • 1/4 cup maple syrup
  • 1/4 cup vegetable oil
  • 1/2 teaspoon cinnamon
  • 2 cups old-fashioned oats
  • 1 cup salted pumpkin seeds
  • 1 cup dried cranberries

Instructions

  1. Preheat oven to 300º
  2. In a bowl whisk together brown sugar, maple syrup, and vegetable oil
  3. Add oats and pumpkin seeds to bowl and stir until coated.
  4. Spread out on a rimmed baking sheet and place in oven for an hour, stirring every 30 minutes, or until crisp.
  5. Remove from oven and transfer back to bowl. Add dried cranberries and toss to combine.
  6. Store in an air tight container for up to two weeks.
