Ingredients
110 oz package VeeTee Spanish Style Rice
2boneless skinless chicken breasts
2tablespoonsolive oil
1cuponionchopped
1green bell pepperchopped
11 oz packet Chicken Taco Seasoning
110 oz can red enchilada sauce
110 oz can diced tomatoes and chilies
1cupshredded Mexican blended cheese
115 oz can black beans, drained and rinsed
1cupfrozen corn
salt and pepper to taste
Instructions
Cut chicken into bite sized pieces season with salt and pepper then sauté over medium high heat in olive oil until it is no longer pink.
Next, add the onions and bell peppers to the skillet and cook until tender.
Then, add the rice, taco seasoning, diced tomatoes and chilies, black beans, corn and enchilada sauce. Stir to combine and then cover and cook for 15 minutes.
Finally, add in cheese and stir into mixture until melted. Serve immediately.
