Substitutions and Variations:
Add a Little Frosting: I made a simple Vanilla Buttercream Frosting for this cake. You could use a Whipped Cream Frosting or this fluffy Marshmallow Frosting. Canned store bought frosting is another easy choice for frosting.
Milk or Almond Milk? Either of these will work great with this recipe.
Make It Festive: Decorate the cake to make it special. Add sprinkles, chocolate chips, crushed cookies or candy bars. Don’t forget the candles for wishing!

Notes and Tips:
Baking Soda and Baking Powder: You need to use both to help the cake rise and to achieve a light, fluffy texture . Do not omit one or reduce the amounts.
Let It Set: Give the milk and vinegar at least five minutes to sit before adding to the dry cake ingredients. The mixture creates a quick buttermilk that will help bring out the sweetness of the cake’s flavor.
Don’t Overmix: If you mix the frosting too much it will start to melt. However, if you do accidentally overmix you can correct this by either by placing it in the fridge for a few minutes, or by adding more powdered sugar.
