Creamy Spinach Alfredo Tortellini is an easy to make recipe that’s ready in about 30 minutes. This savory pasta dish is perfect for busy nights when you need to get dinner on the table in a hurry.
Having a quick pasta dish recipe in your recipe box can be a lifesaver. I have several that I go back to again and again. A few of our favorites are this Easy Three Cheese Tortellini casserole, 30 Minute Skillet Tortellini and this Spicy Sausage Penne Pasta. All of these pasta recipes are loaded with savory flavors like beef, sausage, and cheese.
So what do you do when you crave pasta you’re trying to eat little healthier or you’re going meatless one or two days a week? Don’t panic I’ve got you covered with today’s recipe.
How do you make Spinach Alfredo Tortellini?
- Begin by preparing tortellini according to the package directions
- Melt butter in a large pan over medium heat then add flour and cook 30 seconds stirring constantly. Then, add garlic and sauté until flour and garlic are golden brown, about 30 seconds more.
- Then, Slowly pour in heavy cream and milk and whisk well. Cook stirring constantly until mixture simmers and thickens slightly.
- Next, remove the from from the stove and stir in Parmigiano-Reggiano or Parmesan cheese stirring slowly until the cheese is melted. Cover and keep warm until the pasta skillet is ready.
- In a large skillet sautée onions until they are soft and translucent. Then add the tomatoes and sauté for about 2 minutes. Add the fresh spinach cook until just wilted, this should take about a minute.
- Combine prepared tortellini to skillet then pour Alfredo sauce over the pasta, stir toss together and remove from heat.
- Garnish with fresh parsley more cheese and cracked pepper. Enjoy!
Want to add some extra protein to this pasta? Try adding:
- shrimp
- salmon
- chicken
- beef or chicken tortellini
- or Cannellini or another type of white beans
My tips for this recipe:
- Fresh spinach is recommended for this recipe, but if you have frozen on hand it will be fine. Just be sure to thaw it completely and then wring out any excess liquid before adding it to the skillet.
- You can also switch out the grape tomatoes in this recipe for canned diced tomatoes. If doing this you will need to drain the juice from the can before adding it to the skillet.
- Use grated cheese rather than shredded if possible to ensure it melts evenly and quickly.
- I’ve made this recipe with 2% milk rather than whole milk and while the sauce wasn’t as thick flavor was much the same.
We loved this recipe but honestly we love just about anything with tortellini, who doesn’t right?
Happy Cooking Y’all!
