Being busy is just a way of life. It seems like today more than ever we are always on the move. At some point something has to give and at my house more often than not it’s cooking dinner.
Today I’m partnering with Veetee Rice to bring you an easy and healthy slow cooker dinner that can help you get the family around the table and stay out of the drive thru.
Veetee Rice is a staple in my pantry for several reasons. Not only is it economical it also has a shelf life of a year. That means I can buy in bulk and store it away with my stockpile of canned goods. There is one other very big reason I keep packages of Veetee rice on hand, It is ready in only two minutes. You read that right, only two minutes.
To prepare the rice simply peel back the label and pop in the mircowave and heat for two minutes. Then fluff with a fork. That’s it the rice is done. It can’t get easier than that right?
Did you know that rice is also a healthy choice? It’s true. Rice is high in fiber and is low in cholesterol. It can also help boost your immune system. Rice is also a carbohydrate that the body can easily turn into fuel. it can also aid in brain function.
There are lots of different varieties of rice available from Veetee so no matter your diet choices or needs there’s sure to be one or more that’s a perfect match for you. Varieties include:

This Slow Cooker Teriyaki Chicken and Rice is one of the easiest dinners I’ve put together in a long, long time. This recipe only took about 15 minutes of actual hands on cooking time. That’s pretty awesome, right?
To make this recipe you begin by lining the bottom of the slow cooker with two or three chicken breasts. Then, in a small bowl whisk together soy sauce, sugar, apple cider vinegar, honey, ground ginger, garlic powder, salt and pepper. Pour the mixture over the chicken. Then cook on low for four to six hours.
At the end of the cooking time remove chicken from slow cooker and cut into bite size pieces and set aside. Next add two teaspoons of corn starch to the remaining liquid in the slow cooker and stir until combined.
Return chicken to cooker, replace lid and allow sauce to thicken for then minutes. While the sauce is thickening it is time to prepare the rice.
To do this simply peel back the label on the package of Veetee rice and then cook it in the mircowave for two minutes. When it’s done cooking remove the package from the microwave and fluff with a fork.
I also used this time to steam some broccoli in the microwave.
Once everything was done I just put it together in a bowl and garnished with scallions and sesame seeds. Fast and easy. Oh! and it got the stamp of approval from everyone. Perfect!

Slow Cooker Teriyaki Chicken and Rice

Ingredients
- 2 lbs boneless chicken breasts
- ½ cup sugar
- ½ cup soy sauce
- 1 tablespoon honey
- 3 tablespoons apple cider vinegar
- ½ teaspoon ground ginger
- 1 teaspoon garlic powder
- 2 teaspoons cornstarch
- salt and pepper to taste
- sesame seeds and green onion for garnish
Instructions

Place the chicken breast in the bottom of the slow cooker

In a bowl wihisk together sugar, soy sauce, honey, apple cider vinegar, ground ginger, garlic powder, cornstarch, salt and pepper

Pour mixture over chicken (chicken will not be completely covered in sauce)

Cook on low six hours or high for four

At the end of the cooking time remove chicken from slow cooker and cut into bite size pieces

and set aside.

Next two add 2 teaspoons of corn starch to the remaining liquid in the slow cooker and stir until combined.

Return chicken to cooker, replace lid and allow sauce to thicken for ten minutes. While the sauce is thickening prepare rice
