  • Fresh Basil (optional garnish)
  • Salt and Pepper

  7. Roast in the oven for 30 minutes; turning the sausages and then stirring the onions and peppers halfway through the cooking time. Cook until the sausages are brown or they reach and internal temperature of 160° F.
  8. Garnish with fresh basil or parsley if desired.   Sliced sausage shower in a bed of onions and bell peppers.

Substitutions and Variations:

Sausage Swap: Italian Sausage can be swapped for Chicken Sausage Bratwurst, Kielbasa, or even Smoked Sausage

A Pepper of Any Color: I used red and yellow bell peppers  to add color and for their slightly sweet flavor but you can used any color bell pepper or all of the same color peppers if that what you have on hand.

Tomatoes or No Tomatoes: Since a traditional sausage and peppers dish is typically cooked in a rich tomato sauce, I added cherry tomatoes to this recipe to mimic that tomato flavor. You can omit them if you like.

Sweet Onions: I recommend using sweet yellow onions, but you can use red or white onions instead. Using red or white onion will give the recipe just a touch of heat.

Herbs: Italian Seasoning can be used in place of the dried Basil and dried Oregano.

Serving Suggestions for Sausage and Peppers

On a Hoagie Roll: Serve the Sausage and Peppers on sliced hoagie rolls. Top with provolone or mozzarella cheese. Add mustard, mayo, or even hot sauce to customize to your taste.

Over Rice: Serve the sausage and onions, and peppers over rice and drizzle some of the drippings rom the pan over the everything for added flavor. Top with parmesan cheese and fresh parsley.

Over Pasta: Toss the sliced the cooked sausages then toss into penne pasta along with the onions and peppers. Add your top with my 15 Minute Marinara or  favorite jarred marinara sauce.

Side Dishes:  Serve along side a fresh Chopped Salad, Garlic Bread or these family favorite Sweet Potato Fries.

Storage:

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the microwave in 30 second increments stirring between each or in a skillet on the stove over medium high heat.

I hope you and your family will love this recipe as much as we do! If you do try this recipe please come back and leave a comment letting me know how much you liked it!
