Microwave Peanut Brittle

This is absolutely the easiest Peanut Brittle recipe you will ever make! It’s made in the microwave. Yes, I said microwave! Made with a just few ingredients this easy recipe makes a crisp, pea-nutty, sweet candy that everyone will love!

I love making homemade treats to give to neighbors and friends. Especially around the holidays when everyone seems to be enjoying sweet treats like this Microwave Peanut Brittle. Packaged alone or with cookies and candies like Chocolate Peanut Butter Haystacks, Toffee Candied Peanuts or Oreo Truffles are prefect for gifting. Everyone loves a homemade treat and they’ll love you for sharing!

How to make Microwave Peanut Brittle: (scroll down for full recipe)

Ingredients:

  • roasted salted peanuts
  • sugar
  • salt
  • light corn syrup
  • butter
  • vanilla
  • baking soda 

Special Equipment:

  • glass mixing bowl
  • baking sheet 
  • microwave

Instructions: 

Step One: Spread butter all over a cookie sheet until coated. This will keep the melted brittle from sticking while it hardens and sets. Set the the baking sheet after you’ve prepared it.

Step Two: In a microwave safe glass mixing bowl stir together the peanuts, sugar, salt and the corn syrup. 

Step Three: Microwave on high for 4 minutes. 

Step Four: Add the butter and vanilla, mix well. 

Step Five: Microwave on high for 2 minutes. 

Step Six: Then add baking soda and stir, it will be foamy, then quickly pour on to the buttered baking sheet. Tilting the pan from side to side spread the mixture out evenly until it is about a 1/2 inch thick. 

Step Seven: Let the candy cool and harden for 30 to 45 minutes. Break into pieces and enjoy.

My Notes and Tips:

  • I recommend using a glass mixing bowl. It will heat more evenly in the microwave. This will help ensure all the ingredients are melted and making combining them easier.
  • Be sure to prepare the cookie sheet first, you will need to move quickly to pour the mixture into the pan.
  • Be careful when stirring and pouring the mixture! Even though it is prepared in the microwave the brittle mixture will be very hot.
