I’m taking part in a big blog roundup of potato recipes. When I say big I mean over 40 different recipes for cooking potatoes. My contribution is Oven Roasted Garlic Potatoes. It’s a simple but savory side dish that great for weeknight dinner and holiday cookouts.
Potatoes are a staple in almost every kitchen. They are inexpensive, easy to cook, and filling. They are also incredibly flexible. In fact Iād say potatoes maybe the most adaptable food in my pantry.
This recipe is made with New Red Potatoes. I bought them in a bag that was just about two pounds. I washed them and used a sharp knife to cut away any bad spots. Then I chopped them into quarters.
After chopping the potatoes I put them into a big bowl. Then I add chopped onions, garlic, olive oil, salt and pepper. Then toss everything together until it is mixed evenly.
Prepare a rimmed sheet pan with foil and treat it with nonstick cooking spray. Pour the potato mixture on the sheet pan and spread it out to form one layer .
Place in a preheated 400Āŗ oven and cook for 30 minutes. After 30 minutes stir the potatoes flip the potatoes and sprinkle on scallions. Return to oven for another 15 minutes.
Sometimes I like to dip these beauties in a little sour cream for extra kick. But they are always great on their own.

Oven Roasted Garlic Potatoes
Ingredients
- 2 lbs. red potatoes quartered
- 1/4 cup olive oil
- 3 cloves garlic minced
- 1 cup yellow onion diced
- 5 green onions sliced
- Ā½ Tbsp paprika
- salt and pepper to taste
Instructions

Line a rimmed sheet pan with foil and treat with nonstick cooking spray

Place potatoes, garlic, yellow onions, paprika, salt and pepper in a large bowl.

Drizzle ingredients with olive oil and toss to combine.

Line a rimmed sheet pan with foil and treat with nonstick cooking spray

Pour contents of bowl on to sheet pan in a single layer

Place in preheated oven and cook for 30 minutes

After 30 minutes remove potatoes from oven and flip them over then sprinkle green onions over the top.

Return potatoes to oven and cook for 15 minutes or until potatoes are golden brown and fork tender

Preheat oven to 400 degrees
