Loaded Baked Potato Rounds

Football season is almost here and that means watch parties, rooting for the home team and eating in front of the TV. Loaded Baked Potato Rounds are the perfect food to pair with hamburgers, steaks, barbeque or serve them as a savory appetizer. No matter what you decide, these potatoes are bound to be a TOUCHDOWN with your friends and family.

 Recipe
What you’ll need:
Baking potatoes (I used Russet. As a rule of thumb two potatoes will make enough for two to four people depending on size. This recipe makes four servings.)
1 cup sharp cheddar cheese
2 tablespoons butter
½ cup scallions (green onions)
4 slices cooked bacon
Garlic Powder 
Salt & Pepper
Large cookie sheet
Putting it all together:   
Preheat oven to 400⁰
Scrub the potatoes with a brush or rag to remove any dirt, but do not peel. 
Dry potatoes and slice into ¼ inch thick slices.
Arrange in a single layer lying flat on a cookie sheet. (I wrapped my cookie sheet in foil, and sprayed it with a nonstick cooking spray.)
Melt butter and brush onto both sides (I just popped it in the microwave)
Sprinkle lightly with garlic powder
Salt and pepper to taste
Bake at 400⁰ for 25-30 minutes; flipping halfway through
When potatoes are baked add cheese, bacon, and scallions
Pop into oven cheese is melted.
Serve with sour cream, ranch dressing or other sauce of your choice. 
Don’t be shy with the toppings if you love cheese go crazy, or use another type. Love bacon? I mean let’s face it; who doesn’t really? Add as much as you want. Trying to cut back on dairy? Use less cheese. It’s really up to you.
