Do I have to peel sweet potatoes before eating them?

You do not have to peel the skin from sweet potatoes before cooking. This really is up to you. The skin of sweet potatoes (or any potato) is a good source of fiber and contains a lot of healthy vitamins. If you do choose to leave the skin on the potatoes beside to scrub and rinse the well before roasting.
