German Potato Salad

This is the best German Potato Salad recipe you’ll ever make! Made with loads of potatoes chopped bacon, red onion and a tangy dressing this salad that can be served hot or cold. This savory side side will be the superstar of your cookout!

How to make German Potato Salad:

Ingredients:

  • Yukon Gold Potatoes 
  • Bacon
  • Red Onion 
  • Spicy Brown Mustard
  • Sugar (optional) 
  • Salt and Pepper 
  • White Wine Vinegar
  • Thinly Sliced Green Onion
  • Parsley for Garnish 

Measured ingredients need to make this potato salad recipe presented in small bowls on a wood cutting board.

Directions:

  1. Peel and chop the potatoes into one inch pieces.  Add potatoes to a pot, cover with water. Cover pot with a lid and bring to a boil over high heat, reduce heat to low and simmer, continue to cook until the potatoes can easily be pieced with a fork, 8-10 minutes. Once the potatoes are cooked through drain them from the water and set aside.
  2. In a 10-12-inch skillet over medium-high heat, add the cut bacon and ½ cup of water.  Bring to a boil, reduce to medium heat, cook until bacon is crisp, and the fat has rendered, 10-15 minutes. You can cook the bacon while the potatoes are boiling to save time.
  3. Remove cooked bacon from the skillet, leaving two tablespoons of fat in the pan. 
  4.  Over medium heat, add the minced onion to the skillet with bacon renderings. Cook for 1-2 minutes to soften slightly.  
  5. Remove the skillet from the stove then  add  the white wine vinegar,  spicy brown mustard, sugar, and a pinch of salt and pepper to it to make the dressing. Whisk until all ingredients are combined and sugar has dissolved. 
  6. In a large bowl, add the cooked potatoes, cooked bacon, dressing, parsley, and green onion. Gently stir until all ingredients are incorporated. 
  7. Serve warm, or cover and refrigerate until ready to serve.

How much potato salad do I need for a my cookout?

Typically you need about a half cup of potato salad per person. This recipe will make about 5 cups of German Potato Salad that will feed 10p people. If you are expecting more people you might want to double or even triple this recipe.

What are the best potatoes for making potato salad?

For potato salad you need a waxy potato like Yukon Gold (which is what I used) or Red Bliss, The texture of these potatoes will hold up better to the chopping, boiling and mixing that a more starchy potato like a Russet potato. 

How to customize your potato salad: 

  1. Add ½ cup of chopped celery for extra crunch.
  2. Add a pinch of cayenne pepper or crushed red pepper flakes for a subtle heat if desired.
  3. Add 2-3 minced cloves of garlic the skillet with the red onion to give a garlicky kick to the dressing.
