Corn Casserole

Corn Casserole is a classic side dish that is made with creamed corn, sweet corn, herbs and seasonings and topped with a crust of crisp butter crackers. This recipe is always a crowd pleaser and prefect for holiday meals or potlucks.

How to make Corn Casserole: (scroll down for full recipe):

Ingredients:

  • Cream Style Corn
  • Whole Kernel Corn
  • Eggs
  • Butter
  • Italian seasoning 
  • Garlic Power
  • Onion Powder
  • Salt and Pepper 

Ingredients need to make Corn Casserole presented on a wood background with blue dish towel.

Instructions: 

Step One: Preheat oven to 350°F and spray a 9×13 baking dish with non-stick spray. Set the baking dish aside.

Step Two: Melt the butter in the microwave. This should take about 40-45 seconds. Then in a separate bowl whisk the two eggs.

Step Three: In a medium sized mixing bowl stir together the cans of corn, eggs, butter, Italian seasoning, garlic powder and onion powder, salt and pepper.

Step Four: Transfer the corn mixture into the prepared baking dish.

Step Five: Crush the Ritz cracker into a separate mixing bowl and toss in the melted butter until evenly coated. 

Step Six: Sprinkle butter coated crackers over the corn mixture. And place in the preheated oven for 30 minutes or until the crackers are golden brown. 

Step Seven: Garnish with fresh chopped parsley and cracked black pepper if desired.

Substitutions and Variations:

  • Swap the can of Whole Kernel Corn for a third can of Cream Style Corn or for  even two cans of whole kernel corn and one of cream style. 
  • Leave out the Italian Seasoning if you want the casserole to have a slightly sweeter flavor. 
  • Add a half teaspoon of Paprika to give the casserole a little smokey flavor. 
  • You can swap the Ritz crackers for any butter cracker or even saltine crackers.

My Notes and Tips:

  • I like to finely crush most of the crackers but then reserve a few to break into larger pieces. It makes for a prettier presentation and the larger crackers become crisper in the oven.
  • Whisking the eggs before you add them to the corn mixture will help make sure they blend evenly with the other ingredients. 
  • You can line your baking dish with foil then spray with non-stick spray to make clean-up faster and easier.

Ingredients

For the Corn Mixture

  • 2 cans cream style corn
  • 1 can whole kernel corn drained
  • 2 eggs whisked
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

For the Cracker Crust

  • 1 sleeve Ritz crackers crushed
  • 1/4 cup butter melted

Instructions

  5. Crush the Ritz cracker into a separate mixing bowl and toss in the melted butter until evenly coated.
  6. Sprinkle butter coated crackers over the corn mixture. And place in the preheated oven for 30 minutes or until the crackers are golden brown.
