I am always looking for an easy meal that can be put together in under an hour and only needs one pan. These easy dinners are perfect for nights when it’s too busy or I’m feeling too tired for cook. This easy version for Cajun Chicken Pasta checks all the boxes. If you’re looking for quick, one pan meals you might like these; Spicy Sausage and Penne Pasta, or this 30 Minute Skillet Tortellini.
This Cajun Chicken Pasta is a creamy, savory, delicious dish that is made with cajun seasoned chicken, sautéed veggies, and a rich sauce. It’s also surprisingly easy to make. This sure to be a new family favorite! I just love the Cajun Chicken Pasta at Chili’s, I almost always order it when we go. This recipe is not a copycat recipe. It is, however, just as delicious as the restaurant version. Featuring many of the same flavors as the restaurant version.
Preparing the Chicken:
To prepare the chicken for the recipe you’ll cook it in a large skillet or pan. To do this cut uncooked chicken into bite size pieces and season with Cajun Seasoning, salt and pepper. Then cook over medium heat stirring constantly for about 10 minutes. You can use either boneless skinless chicken breasts or thighs for this recipe I find they cook a little fast and the dark meat provides a little extra flavor.
Which is healthier chicken breasts or thighs?
People tend to believe that breast meat is healthier because it is white meat had very little fat. However this is a misconception. There is actually very little difference between white and dark meat in both caloric and fat measurements.
If you are still concerned about the fat in chicken thighs then you trim away the fat from the thighs before cooking.
While the chicken is cooking prepare the pasta according to package directions.
What kind of pasta should I use?
I prefer Farfalle (Bow Tie) pasta for this recipe. The flat sides of this pasta are perfect for picking up the creamy sauce. Giving you a touch of the wonderful rich flavor in every bite.
A flat pasta like linguine or fettuccine will also work wonderfully with this recipe. As will a pasta with ridges like penne.
How to make Cajun Chicken Pasta:
Using the same pan melt butter and sauté onions, peppers and garlic. The garlic is optional. It was something I added to the recipe because I like garlic. Cook vegetables until they are tender.
Next add the flour to the mixture and stirring until they begin to stick together. Then slowly add in heavy cream, stirring constantly until smooth and creamy.
Once the sauce is ready add in another teaspoon of Cajun Seasoning and chopped tomatoes. Stir until well combined. I use a half of a can of petite diced tomatoes. If you do this be sure to drain the juice from the can first. You don’t want to add any liquid to the sauce because it will make it too thin to stick to the pasta.
Finally, return chicken to skillet toss to coat in sauce. Then add the prepared pasta and stir t combine. Turn heat to low and let stand for 10 minutes.
Garnish with scallions and Parmesan cheese if desired.

Cajun Chicken Pasta

Ingredients
- 2 lbs. boneless skinless chicken breasts or thighs, bite sized pieces
- 16 ounces bow tie pasta
- 2-3 teaspoons cajun seasoning
- 1/4 cup flour
- 1 cup red bell pepper diced
- 1 cup onion diced
- 1/2 cup tomatoes chopped
- 1 cup whole milk heavy cream, or half and half
- 4 tablespoons butter
- 3 cloves garlic or tablespoon garli powder
Instructions

Prepare pasta according to directions.

Cut uncooked chicken into bite sized pieces. Sprinkle one teaspoon of the Cajun Seasoning over chicken. Add salt and pepper.

Prepare a large skillet with non-stick spray. Transfer the chicken tot he skillet and cook over medium high heat for 8-10 minutes or until chicken is cooked through. Remove chicken from pan and set aside.

Using the same skillet melt the butter then and add pepper and onions cooking until tender and onions are translucent. Add garlic to skillet and cook until garlic for about a minute stirring constantly so it doesn't burn.

Add flour to pan and stir until flour and vegetables clump together. Add the diced tomatoes and stir until incorporated.

Slowly add the milk to pan stirring until the sauce becomes smooth and creamy.

Stir in two teaspoons of Cajun Seasoning until well combined

Mix in prepared pasta and chicken stirring until coated, Simmer on low heat until warmed through.

Garnish with sliced green onions and and grated parmesan cheese if desired.
Recipe Notes
Note the pasta appears much lighter in the pictures than in real life.
