Cajun Chicken Pasta is a creamy delicious dish that’s made with cajun seasoned chicken, sautéed veggies, and a rich sauce. It’s also surprisingly easy to make. This sure to be a new family favorite!

Cajun Chicken Pasta is a creamy, savory, delicious dish that is made with cajun seasoned chicken, sautéed veggies, and a rich sauce. It’s also surprisingly easy to make. This sure to be a new family favorite! I just love the Cajun Chicken Pasta at Chili’s, I almost always order it when we go. This however is not a copycat recipe. It is however just as delicious with many of the same flavors as the restaurant version.

To prepare the chicken for the recipe you’ll cook it in a large skillet or pan. To do this cut uncooked chicken into bite size pieces and season with Cajun Seasoning, salt and pepper. Then cook over medium heat stirring constantly for about 10 minutes. You can use either boneless skinless chicken breasts or thighs for this recipe I find they cook a little fast and the dark meat provides a little extra flavor.

Which is healthier chicken breasts or thighs?

People tend to believe that breast meat is healthier because it is white meat had very little fat. However this is a misconception. There is actually very little difference between white and dark meat in both caloric and fat measurements.  

If you are still concerned about the fat in chicken thighs then you trim away the fat from the thighs before cooking. 

While the chicken is cooking prepare the pasta according to package directions.

What kind of pasta should I use?

I prefer Farfalle (Bow Tie) pasta for this recipe. The flat sides of this pasta are perfect for picking up the creamy sauce. Giving you a touch of the wonderful rich flavor in every bite.

A flat pasta like linguine or fettuccine will also work wonderfully with this recipe. As will a pasta with ridges like penne.

How to make Cajun Chicken Pasta:

Using the same pan melt butter and sauté onions, peppers and garlic. The garlic is optional. It was something I added to the recipe because I like garlic. Cook vegetables until they are tender.

Next add the flour to the mixture and stirring until they begin to stick together. Then slowly add in heavy cream, stirring constantly until smooth and creamy.

Once the sauce is ready add in another teaspoon of Cajun Seasoning and chopped tomatoes. Stir until well combined. I use a half of a can of petite diced tomatoes. If you do this be sure to drain the juice from the can first. You don’t want to add any liquid to the sauce because it will make it too thin to stick to the pasta.

Finally, return chicken to skillet toss to coat in sauce. Then add the prepared pasta and stir t combine. Turn heat to low and let stand for 10 minutes.

Garnish with scallions and Parmesan cheese if desired.

Ingredients

  • 2 lbs. boneless skinless chicken breasts or thighs, bite sized pieces
  • 16 ounces bow tie pasta
  • 2-3 teaspoons cajun seasoning
  • 1/4 cup flour
  • 1 cup red bell pepper diced
  • 1 cup onion diced
  • 1/2 cup tomatoes chopped
  • 1 cup whole milk heavy cream, or half and half
  • 4 tablespoons butter
  • 3 cloves garlic or tablespoon garli powder

Instructions

  1. Prepare pasta according to directions.
  2. Cut uncooked chicken into bite sized pieces. Sprinkle one teaspoon of Cajun
  3. Seasoning over chicken. Add salt and pepper. Prepare a large pan or skillet
  4. with non-stick spray and then cook chicken, stirring constantly for 8-10
  5. minutes. Remove chicken from pan and set aside.
  6. In the same pan melt butter and add peppers, onions, and garlic to melted
  7. butter and cook for two minutes.
  8. Add flour to pan and stir until flour and vegetables clump together. Add tomatoes and stir until incorporated.
  9. Slowly add milk to pan stirring until sauce becomes smooth and creamy.
  10. Stir in two teaspoons of Cajun Seasoning until well combined
  11. Mix in pasta and chicken stirring until coated and the chicken is warmed
  12. through.
  13. Garnish with scallions and Parmesan cheese if desired.
  14. ***Note the pasta appears much lighter in the pictures than in real life.
