Ingredients

  • 1 10 oz package VeeTee Spanish Style Rice
  • 2 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 cup onion chopped
  • 1 green bell pepper chopped
  • 1 1 oz packet Chicken Taco Seasoning
  • 1 10 oz can red enchilada sauce
  • 1 10 oz can diced tomatoes and chilies
  • 1 cup shredded Mexican blended cheese
  • 1 15 oz can black beans, drained and rinsed
  • 1 cup frozen corn
  • salt and pepper to taste

Instructions

  1. Cut chicken into bite sized pieces season with salt and pepper then sauté over medium high heat in olive oil until it is no longer pink.
  2. Next, add the onions and bell peppers to the skillet and cook until tender.
  3. Then, add the rice, taco seasoning, diced tomatoes and chilies, black beans, corn and enchilada sauce. Stir to combine and then cover and cook for 15 minutes.
  4. Finally, add in cheese and stir into mixture until melted. Serve immediately.
