Tomorrow is the first day of Spring. I love Spring when everything starts to bloom and the days get a little longer. It’s nice to be able to get out of the house and go for a walk in the evening or to sit out on the patio and read a book. This year I’ve decided to try something plant tomatoes and maybe peppers. I’m not known for my green thumb and in fact I once killed a cactus so we’ll see what happens but if you don’t try you’ll never learn, right?
This week’s meal plan is full of family friendly recipes that are perfect for gathering around the table to enjoy. There’s a recipe for homemade Sweet Potato Gnocchi, Lasagna, and Chicken Avocado Tortilla Soup. Plus if you’re in a hurry you’ll love my recipe for Easy Red Beans and Rice.
