Chocolate Chip Cookies are my favorite type of cookie. So, when I saw this recipe for Chocolate Chip Cookie Bars I knew I had to try it. These cookie bars are the perfect snack or a great dessert for dinner or lunch.
There’s a little surprise in the recipe it starts with a yellow cake mix. Now I know what you’re thinking, cake mix? I know because I thought the same thing but really it gives the cookie bars a rich flavor.
So as I mentioned in the past I’m not much of a baker. I find it all a bit intimidating so if I’m making cakes or cookies you know they are easy.
Begin the recipe by dumping a box of yellow cake mix, instant vanilla pudding mix, water, vegetable oil, eggs and chocolate chips in a large bowl. Combine ingredients. I used a hand mixer on low for a couple of minutes. You can mix this by hand but it is a very thick batter so be prepared to really work your arm out.
Once you’ve mixed the batter spread it out evenly in a greased 9×13 cake pan. Place into a preheated oven and bake for 20 to 30 minutes.
These cookie bars are soft and gooey. If you would prefer a crunchier bar you can bake them five to ten minutes longer. If you choose to bake them longer be sure to keep an eye on the oven.
Allow pan to cool completely before cutting the into squares or rectangles.

- 1 box yellow cake mix
- 1 small box instant vanilla pudding
- ¼ cup water
- ¾ cup vegetable oil
- 2 eggs
- 1 cup chocolate chips
- Preheat oven to 350º degrees.
- Combine all ingredients in a large bowl.
- Pour into a greased 10X13 baking dish, spread evenly
- Bake for 20 to 30 minutes (add 10 minutes for crispier cookie bars)
